This recipe was first prepared for me by Star Asimakoupolus in Wenatchee, WA in the 1970’s. It has become a traditional Christmas pie in our home. It looks like snow and is a very unique variation of an apple pie.

  • 6-8 apples
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • ½ heavy cream
  • 1 baked pie shell
  • ½ cup coconut
  • ½ cup walnuts

PEEL slice and simmer apples until tender.
MIX sugar, cornstarch and cream in double boiler.
COOK until thickened.
ADD cooked apples. Remove from heat and cool.
POUR apples into one pre-baked pie shell.

Topping

  • 8 ounces cream cheese
  • 1 egg
  • ½ cup sugar
  • 1 cup angel flake coconut

BLEND cheese, egg and sugar with mixer and spread on apple filling.
TOP with angel flake coconut and chopped walnuts.
BAKE at 325 degrees for 15 minutes.

Ready to serve.
