My dear neighbor, Nancy Aprico in Wenatchee, WA during the 1970’s gave me this basic recipe. Over the years I have created many variations and call it “my own.”

  • 1 papaya (seeds only)
  • 1 cup oil
  • 1 cup white vinegar
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 small onion

SCOOP seeds from 1 papaya into blender.
ADD all ingredients and blend.

Makes one quart. Store in refrigerator: Good on fruit or greens.

Variations of this dressing can be created by using different types of vinegar and omitting the papaya seeds.

My favorite combination salad with this dressing is:
Romaine lettuce
Slices of fresh papaya
Walnuts
Red onion
Crumbled goat cheese (feta cheese can be substituted)
Spring mix salad greens with strawberries, raspberries, or blueberries in place of the papaya are an excellent variation.

*Fresh papaya seeds can be frozen in zip-lock bags to use later
Ready to serve.
